A carbohydrate intake below 150 grams a day is considered a low-carb diet, compared to the standard American diet, which has more than 300 or 400 grams of carbohydrates a day. To lower your carb intake, your consumption of starchy vegetables, grains, sugar, fruits and dairy needs to be limited or even eliminated. Usually, non-starchy vegetables like tomatoes contain very small amounts of carbohydrates, which is suitable for a low-carb diet. However, when consumed in the form of a soup, the carbohydrate content may reach even more significant levels.

Depending on the type of tomato soup you choose, the carbohydrate content may vary. For example, 1 cup of canned tomato soup provides approximately 21 grams of carbohydrates and 2 grams of fiber, according to the USDA National Nutrient Database. A packet of dry tomato soup that can be rehydrated and served contains 23 grams of carbohydrates and 1 gram of fiber. If you opt for canned condensed tomato soup, each 1/2 cup contains 17 grams to 20 grams of carbohydrates and 1 gram of fiber.

Tomato Soup To Avoid

Some tomato soups have a higher content, especially if they contain rice, noodles, pasta, potatoes or other high-carbohydrate food. For example, 1 cup of condensed tomato and rice soup has 44 grams of carbohydrates and 3 grams of fiber and 1 cup of condensed tomato with beef and noodle soup has 42 grams of carbohydrates and 3 grams of fiber. Stick to vegetable-based soup and skip starchy foods. Meat, fish or poultry can be added without affecting the carbohydrate content. Preparing your own homemade tomato soup is a good idea to keep the carbs lower, as most commercial varieties contain added sugar.

Tomato Soup and Low-Carb Diets

Although tomato soups have a higher carbohydrate content compared to most vegetable-based soups, you can include it as part of your low-carb eating plan, depending on your personal carbohydrate target. If your daily carb target is below 20 grams a day, you are best to avoid eating tomato soup or eat only very small amounts of it. If your daily carb target is 100 grams a day, you have more leeway and tomato soup shouldn't prevent you from sticking with your low-carb diet.

The best way to ensure you stay on track with your low-carb diet is to start counting your daily carbohydrate intake.  CREAMY TOMATO SOUP
2 tablespoons butter
1/2 cup onion, 2 3/4 ounces
28 ounce can diced tomatoes, undrained
2 cups chicken broth, homemade preferred
1 cup heavy cream
Salt and pepper, to taste
2 tablespoons parsley, minced, optional

In a 3-quart pot, sauté the onion in butter until tender. Add the tomatoes, with their liquid, and broth; bring to a boil. Simmer 5 minutes. Puree with a stick blender until smooth. Stir in the cream and adjust the seasoning. Stir in the parsley and serve at once.
