If you were born in India during or after the 1990s, chances are that you will name Sanjeev Kapoor as one of the top chefs in the country. And why won’t you? He has single-handedly glamorized the profession of cooking. His recipes are famous across the nation and he is easily thought of as the maverick chef who can conjure up dishes from any cuisine, using any ingredients and serving any audience. He is India’s own food magician, who has inspired hundreds of budding chefs to come to the forefront and choose the culinary arts as their profession.

Using tomatoes as the main ingredient in a soup is no tough job, so it seems. But, once you get to the task, you begin to wonder just how much you can innovate and experiment to make something new out of a simple tomato soup recipe. Not a mean task for us, but a task done in a jiffy by Sanjeev Kapoor! Here are some innovative ways of making tomato soup by Sanjeev Kapoor straight from his kitchen.
1. Roasted Garlic and Tomato Soup:
This palatable soup is an innovation of Sanjeev Kapoor. By roasting the tomatoes and garlic, he adds a new dimension to the already fragrant ingredients and gives it a more earthy touch.

Ingredients:

    8 medium Tomatoes
    1 Garlic
    2 tablespoons Olive oil
    1 medium sized Onion
    1 Bay leaf
    Salt to taste
    2 sprigs fresh thyme (Ajwain ka Phool)
    1/2 cup Tomato puree
    10-12 Basil leaves (Tulsi)
    Crushed black peppercorns
    1 slice White bread
    Basil oil to drizzle
The How-to:
    Peel and chop the tomatoes and onion.
    Next, slice the garlic bulb to get a thin slice. Take this slice in a bowl and add some salt and olive oil. Place this bowl in the oven on high heat till the garlic is brown.
    Now, fry the onion, tomatoes, bay leaf and salt in a little olive oil. Add 2-3 cloves of garlic to this and then pour in some water.
    To the water, add the entire remaining bulb of garlic and the thyme sprigs and allow the pan to boil.
    After it is properly boiled, pour in the tomato puree, basil leaves and crushed pepper.
    Allow the soup to cook till the tomatoes are cooked and soft.
    Strain the mixture and remove the garlic bulb, and thyme sprigs. You will be left with some thin strained stock and a thick mixture.
    Set the stock aside for later use.
    Now blend the thick mixture, adding a little water if necessary. In the last whisk of the blender, add a slice of brown bread to the soup.
    Lastly, take both the stock and puree in a pan and boil it.
    Serve this unique tomato soup piping hot, garnished with basil leaves or basil oil.

2. Thick Tomato Soup:
Combining the nourishment of olive oil and tomatoes with the fragrant herb basil makes this deliciously thick soup that we are sure you will love to indulge in. Try this another tasty tomato soup recipe by Sanjeev Kapoor!

Ingredients:

    5-6 medium Tomatoes
    2 tablespoons Olive oil
    2 medium Onions
    1/2 teaspoon Cumin seeds (Zeera)
    3-4 cloves Garlic
    Salt to taste
    Black pepper
    4 Bread slices
    Fresh basil leaves

The How-to:

    Chop the onions and tomatoes roughly and crush the garlic.
    Heat a pressure cooker and sauté the cumin seeds, onions and garlic.
    Add the chopped tomatoes and stir well.
    To this, add salt and pepper to taste.
    Next, pour in 2-3 cups of water and allow this mixture to cook in the pressure cooker for about 3 whistles. When the steam goes down, open the pressure cooker and transfer the contents to a blender jar and allow it to cool for a while.
    Once cool, add trimmed bread slices and basil leaves to the blender jar and blend everything well. Heat the blended soup and serve hot with any garnish of your choice.

3. Macaroni and Tomato Soup:
Surprised by the name? Well, that’s chef Sanjeev Kapoor for you! He can make the strangest of combinations work together beautifully. This easy to make soup will be a super hit with your family and guests alike.

Ingredients:

    1/4 cup Boiled Macaroni
    2 medium Tomatoes
    1 tablespoon Butter
    2-3 cloves Garlic
    1 small Onion
    4 tablespoons Tomato puree
    5 Cups Vegetable stock
    Salt to taste
    Black pepper
    8-10 Basil leaves

The How-to:

    Boil the macaroni as directed on the pack and keep aside for later after straining the water.
    Chop the tomatoes and onion and crush the garlic cloves.
    Now heat the butter in a deep pan and sauté the garlic, onion and tomatoes in it.
    Cook them well for about 5-8 minutes and after this add the tomato puree.
    Cook everything well. When the puree is cooked and blended well with the other ingredients, pour the vegetable stock, salt and black pepper and boil everything well for about 3-4 minutes.
    Right before serving, add the macaroni and garnish the dish with basil leaves. Serve hot to the delight of your guests.

4. Tomato and Fennel Soup:
Another unheard of combination, another hit recipe for tomato soup by Sanjeev Kapoor! This highly fragrant variation of the tomato soup will wow everyone.

Ingredients:

    6 medium Tomatoes
    100 grams Fennel seeds (saunf)
    2-3 tablespoons Olive oil
    1 medium Onion
    7-8 Garlic cloves
    Black pepper
    1 bunch Fresh coriander
    Salt to taste
    3-4 tablespoons fresh coriander leaves
    1 tablespoon extra virgin olive oil

The How-to:

    Roughly chop the onion and tomatoes.
    Sauté the garlic, onion and black peppercorns in olive oil.
    To this, add the tomatoes and cook well.
    Tie the fennel seeds in a muslin cloth and place the fennel bag in the pan.
    Cover the pan and allow it to cook for 2-3 minutes.
    Next, tie the coriander stems together and place them in the pan. Also add salt to taste and 2-3 cups of water. After cooking it for 3-5 minutes, take out the fennel bag and coriander bunch.
    Add chopped coriander and olive oil.
    Pour this mixture in a bowl and blend coarsely or finely according to personal liking. Serve hot and woo any audience.
