Creamy Tomato Soup for a Cold Day:
A steamy bowl of creamy tomato soup and a warm grilled cheese sandwich is a marriage made in heaven. Nothing can satisfy me more on a chilly winter day
For years I used a recipe that called for roasted Roma tomatoes as the base of the soup. Roasting the tomatoes intensified the tomato flavor.
One day, I was craving a bowl of tomato soup but only had canned tomatoes. I decided to give it a try with the ingredients I had on hand.
And guess what?! It was just as delicious.
When you think about it, it makes sense. Canned tomatoes are picked and then canned at the peak of ripeness. They are full of that delicious summer tomato flavor. The reason for roasting in my other recipe was to transform those bland not-in-season tomatoes into tasty summer ones.
I am so glad I experimented with what was in my pantry. No more roasting tomatoes to make soup for me. I can now make one of my favorite soups in 45 minutes less time than I did before!
Most days I use whole canned tomatoes. To make it creamy, I puree the soup with an immersion blender. If you don’t have an immersion blender, you can easily puree your soup in a counter-top blender.
For a short-cut, use canned crushed tomatoes and skip the pureeing step.

Creamy Tomato Soup
A steamy bowl of creamy tomato soup and a warm grilled cheese sandwich is a marriage made in heaven. Instead of serving the sandwich on the side, try cutting it up and using the cheesy squares as croutons!
2 tablespoons olive oil
1/4 cup finely diced yellow onion (1/2 small onion)
2 cloves garlic, minced
1 can (28-ounce) crushed tomatoes
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1 tablespoon granulated sugar
3 cups chicken stock
1 cup heavy cream
Kosher salt and freshly ground black pepper
In a large stockpot over medium-high heat, warm the oil until a few droplets of water sizzle when carefully sprinkled in the pot. Add the onion and garlic. Cook, stirring often, until the onions are soft, about 5 minutes.
Add the tomatoes, oregano, thyme, and sugar and stir to combine. Pour in the chicken stock and stir to combine. Bring the mixture to a boil over high heat. Lower the heat to medium-low and simmer uncovered until the soup has thickened, about 20 minutes. Whisk in the heavy cream and simmer for 10 more minutes. Season with salt and pepper to taste. Serve warm.
Creamy tomato and rice soup gets its flavor from tomatoes and cashew butter:
When I was a kid, creamy tomato and rice soup was one of my go-to comfort foods.
My mom would make it for me, and she would make it from a box. The soup was cloyingly creamy-sweet and the rice was overcooked and mushy.
I didn't much care. It was happiness in a bowl.
I've been pretty much chasing that flavor memory ever since. And I'll just say, whenever I've come close, it hasn't involved a box.
But I'm not opposed to cracking a few cans.
Of tomatoes.
This creamy tomato and rice soup is my work-in-progress attempt to replicate the comfort food of my childhood, but with better results and much better ingredients.
For depth of flavor (but still tons of ease), I start with canned whole tomatoes.
They get a brief stint under the broiler to caramelize the sugars and deepen the flavors.
For even more flavor, the rice is cooked in a blend of chicken broth and the tomato juices strained from the cans.
But it's the creaminess that puts it over the edge. Instead of cream, I use cashew butter. It's just as rich and creamy, but less sweet.
Nuts and tomatoes work wonderfully together, and this soup is a fine example.
The cashew butter (sold alongside peanut butter), keeps the overall flavor of the soup savory without sacrificing the creaminess we find so comforting.
Speedy Roasted Tomato and Rice Soup
Start to finish: 30 minutes
Servings: 6
Two 28-ounce can whole, peeled tomatoes
2 cups low-sodium chicken broth
1/2 cup long-grain white rice
2/3 smooth cashew butter
2 tablespoons chopped fresh thyme
Salt and ground black pepper
Hot sauce, to taste
Heat the oven's broiler. Line a rimmed baking sheet with foil, then mist it with cooking spray.
Holding a mesh strainer over a large soup pot, strain the tomatoes. Set the pot aside, reserving the tomato juice.
Split each tomato in half and arrange on the prepared baking sheet. Mist the tops of the tomatoes with cooking spray, then set on the oven's middle rack and broil for 5 minutes, or until lightly charred. Use tongs to flip the tomatoes and broil until the second sides are charred, another 5 minutes.
Meanwhile, add the broth to the pot of tomato juice. Bring to a simmer over medium-high heat. Add the rice, return to a simmer, cover, then reduce heat to maintain a simmer and cook for 15 minutes, or until the rice is tender. The rice will not absorb all of the liquid.
When the tomatoes are charred, use tongs to transfer them to a blender or processor. Add the cashew butter, then puree or process until very smooth. Add the tomato-cashew mixture to the rice, then return to a simmer. Add the thyme, then season with salt and pepper. Taste, then stir in hot sauce. Aim to add just enough hot sauce to heighten the flavors, but not add a discernable heat.
