Tomato-Basil Soup

This creamy tomato soup is super-flavorful courtesy of fire-roasted diced tomatoes and our delicious blend of ingredients. Don't forget the cheesy French bread. Dunking is a must!
Ingredients
1 tablespoon extra-virgin olive oil $
1 1/2 cups prechopped onion $
3 garlic cloves, chopped $
3/4 cup chopped fresh basil
1 (28-ounce) can fire-roasted diced tomatoes, undrained
1/2 cup (4 ounces) 1/3-less-fat cream cheese, cut into cubes $
2 cups 1% low-fat milk $
1/4 teaspoon salt $
1/4 teaspoon black pepper $
12 (1/2-inch-thick) slices French bread $
Cooking spray
1 garlic clove, halved $
1 ounce shredded Asiago cheese $
Preparation

1. Preheat broiler to high.

2. Heat olive oil in a saucepan over medium-high heat. Add onion; sauté 3 minutes. Stir in garlic; cook for 1 minute. Add basil and tomatoes; bring to a boil. Stir in cheese until melted. Place mixture in blender, and blend until smooth. Return to pan; stir in milk, salt, and pepper. Return to medium-high; cook 2 minutes.

3. Place bread on baking sheet; lightly coat with spray. Broil 1 minute. Rub garlic over toasted side; turn bread over. Top with Asiago; broil 1 minute.
Six-ingredient Basil Tomato Soup Recipe:
Ingredients

    2 cans (28 ounces each) crushed tomatoes
    1 can (14-1/2 ounces) chicken broth
    18 to 20 fresh basil leaves, minced
    1 teaspoon sugar
    1 cup heavy whipping cream
    1/2 cup butter

Directions

    In a large saucepan, bring the tomatoes and broth to a boil. Reduce heat; cover and simmer for 10 minutes. Add basil and sugar. Reduce heat to low; stir in cream and butter. Cook until butter is melted. Yield: 9 servings.
Rachel's Tomato Basil Soup:
Ingredients

    1 (28 ounce) can crushed tomatoes

    1 (11.5 ounce) can tomato-vegetable juice cocktail

    1 (14.5 ounce) can chicken broth

    20 fresh basil leaves, cut into thin strips

    1 cup heavy cream

    1/4 cup butter or margarine
Directions

    In a large saucepan, combine the tomatoes, vegetable juice, and chicken broth. Bring to a boil, and cook for 30 minutes. Remove from heat, and stir in the basil. At this point, you may puree the soup if you wish. Add the cream and butter; return to medium-low heat, and stir until butter is melted. Serve immediately.
